Egg White Omlette

The other day, I decided to try the whole egg white omlette thing. I just added a little bit of cheese then covered it in salsa. It tasted ok, but it just wasn't enough.

Tonight, though. Holy cow this was good. And a total of 3.5 WW points. With the points I saved, I am going to go have a glass of wine!

  • 3 egg whites
  • 1/4 cup cheddar cheese
  • mushrooms
  • spinach
  • asparagus roasted in olive oil and balsamic vinegar
  • S&P
  • salsa
Eating right will definitely be easier if I can figure out the whole cooking thing. =)

Favorite low-point meal:

shrimp marinated in teriyaki (or low sodium soy sauce), skewer around a piece of pineapple and grill

That sounds good. I am a big fan of making frittatas for the family. It is basically a crustless quiche. I can pretty much put anything into it and the kids will eat it.
